The Sushi Chef
Wagner Spadacio – Sushi Chef at Buddha-Bar Monte-Carlo
Wagner Spadacio, originally from Brazil, which is home to one of the world’s biggest Japanese communities, developed a fondness for this cuisine when he was very young.
He moved to France in 2003, and trained with some of the greatest French and Italian chefs. He then took part in a highly reputable training course for Japanese cuisine, which is when he decided to become the best in the field.
His thirst for learning took him to London, Saint Barthélemy, Guadeloupe and finally to Monaco, where he decided to compete.
In 2016 he won the French Sushi Open, and in 2017, he won the 1st French Sushi Championships, during which a jury of MOF and big names in the speciality appreciated Spadacio’s talent, knowledge and technique. This title makes him eligible to compete in the World Sushi Cup which will take place in Tokyo in 2018.
Spadacio is now chef of Japanese cuisine at Buddha-Bar Monte-Carlo, where he works with Chef Eric Guillemaud to the delight of many diners day after day and where he will be offering individual lessons starting in October.
